Williams Cutlery
(2 recs) Williams Cutlery is great, but requires you to leave your knives for a few days. My knives came out sharp and much easier to cut with than even when brand new. Expect to pay around 50 cents/blade-inch.
Sur La Table
You can also go to most Sur La Table on a Saturday and they sharpen them while you wait. I just don't trust them to sharpen my knives, personally.
SF Places
My recommendation: Hone your knife every day at home, but absolutely have it professionally sharpened annually or biannually. If you're in SF, try Columbus Cutlery in North Beach (where a lot of chefs go) or North Beach Cutlery, which is across the street and, I believe, owned by a relative or former employee of the folks who own Columbus Cutlery. Razor Sharp Cutlery (near Civic Center) is ok, too.
Ferry Building
Following along this thread w/ another SF option... I think the Saturday Farmer's Market at the Ferry Building has a booth that does same-day knife sharpening. The guy had quite a following when the Market used to be down the street (before moving to the Ferry Bldg). I personally never tried him out, but, assuming he's still there, his longevity at the Market says a fair amount about customer satisfation...
